Mango Barbecue Sauce





mangobbqWhen it rains it pours mangoes! A delicious way to use mangoes during the season is to make barbecue sauce.

This recipe below is used fresh or can it in a hot water bath. Create this sweet yet savory sauce and use it on pork, chicken or fish.

 

 

 

Mango Barbecue Sauce

ingredients:

  • 4 cups of ripe, unbruised mangoes
  • 2 inch piece of fresh ginger
  • 2 cloves of garlic
  • 1 tbs of mustard
  • 1/2 cup of soy sauce
  • 2 tbs vinegar
  • 1/4 of orange juice
  • 1/4 cup of macadamia nut oil
  • 1/4 cup of honey
  • 3 tbs of brown sugar
  • 1 tsp of Worcester sauce
  • 1 tsp of chopped rosemary
  • 1 Hawaiian hot pepper chopped finely

De-seed and skin mangoes. Use a mortar and pestle to crush peeled ginger and garlic. Add into a stock pot with remaining ingredients. Use an immersion blender to puree. Heat to boiling. Lower and reduce to thicker consistency. Use as needed or pour into sterilized mason jars and process in boiling water for 5 minutes.
